1 cup (250 mL) fresh or frozen peas
1 tsp. (5 mL) ground cumin
2 shallots, diced
1 clove garlic
½ lime zested and juiced
½ tsp. (3 mL) red pepper flakes
2 tbsp. (30 mL) chopped fresh cilantro (optional)
Salt and pepper to taste
If using fresh peas, blanch in a pot of boiling salted water for 30 seconds, refresh in ice water bath.
If using frozen peas, thaw and drain off the water.
Combine ingredients in a food processor until smooth. Serve with tortilla chips, crackers, crustinees or cruidite.
